Join the Open Center this fall for a week-long retreat in Ronciglione, Italy, that will nourish your body and soul, and reconnect you to Nature. Enjoy a true feast of the senses as we travel to Villa Lina, an organic farm and estate located just northwest of Rome in Viterbo—"the mouth of Tuscany"—where the cultivation and sharing of food is a uniquely spiritual experience. A more perfect backdrop to learn true Italian country cooking is hard to imagine.
Our hostess, Italian writer and local historian Paola Igliori, is a descendant of the original owners of the estate, which today is a working organic farm producing hazelnuts, chestnuts, and kiwis, and small vinyard. We will be studying with Chef Ivana, who brings to this program authentic Etruscan recipes, and Chef Lucia, a true genius in the kitchen whose specialties are vegetable dishes and desserts. We will also be sharing our time with Dr. Karin, a medical doctor and herbalist.
This is an opportunity to reconnect with the rhythms and the bounty of the earth as we spend our days learning to prepare sublime meals, gathering fresh vegetables and herbs from Villa Lina’s fragrant, surrounding fields, or from the traditional open-air markets of the nearby town. There will also be mini-classes in conversational Italian. We will visit the romantic medieval town of Calcata and explore lush waterfalls and grottos in the area. Minutes from Villa Lina are the Etruscan ruins and Byzantine churches of neighboring Sutri. Also we will visit Viterbo, the region’s capital.
