Leslie Cerier

For over twenty years, Leslie Cerier, “The Organic Gourmet,” has been teaching culinary nutrition and hands-on vegetarian cooking for health and vitality. She is the author of several cookbooks and articles focusing on eating local, seasonal, organic foods that are not just good for you, but also pleasurable, delicious, and good for the planet.

In this Open Center Online Learning class, Leslie walks and talks you through the steps involved in making spring rolls, egg rolls, and nori rice rolls. She demonstrates that no matter what size the kitchen, anyone who wants to cook with a conscience can make healthy food that nourishes the mind, body, and spirit.

Using organic (and easily accessible) ingredients, she brings an enthusiasm and down to earth approach to cooking that will appeal to any cook, no matter what their skill level.

This class is divided up into over two dozen videos that illustrate the processes involved in creating the three Asian dishes. Replay and review of the ins and outs of Leslie’s cooking tips are always just a play button away.

Feng Shui is an ancient art developed over three millennia ago in China. It is a complex body of knowledge that reveals how to balance the energies of any given space to assure the health and good fortune for the people inhabiting it. Urban Feng Shui applies these principles to apartment and city-living contexts.

Applying the theory and principles taught by RD's teacher and mentor, the late feng shui HH Grandmaster Lin Yun, this class will give you the tools you need to transform your personal space and, importantly, the mindset that goes with it. This 4-week online course combines Western design principles with Feng Shui to align any space with dimensions of spirit, character, and a feeling of balance. This class is great for both the lay person as well as the budding Feng Shui consultant.

Breath is fundamental to every aspect of our life. We are born with an ability to breathe deeply and fully, but as we go through life, stress and tension can cause our breathing to become shallow and constricted and our voices strained and weak. Inefficient breathing can lead to fatigue, anxiety, muscular tension and even digestive problems. Getting back to the way nature designed us to breathe is a tonic that revitalizes body and mind. In this course we will explore ways to reestablish our natural, coordinated way of breathing. In a safe, supportive space, we will use meditation, breathwork, sound and movement to open our hearts, relax our minds, and discover the healing of communication through intimacy. This workshop is particularly valuable for those new to tantra and is for both hetero- and homosexual couples and singles. Singles can pair up for the experiential portions of the class if they feel comfortable doing so.

We will learn compassionate listening skills, ways to stay connected during challenging conversations,  and how to resist habitual reactions and create closer relationships by transforming judgment and blame into mutual understanding.
