Leslie Cerier

For over twenty years, Leslie Cerier, “The Organic Gourmet,” has been teaching culinary nutrition and hands-on vegetarian cooking for health and vitality. She is the author of several cookbooks and articles focusing on eating local, seasonal, organic foods that are not just good for you, but also pleasurable, delicious, and good for the planet.

In this Open Center Online Learning class, Leslie walks and talks you through the steps involved in making spring rolls, egg rolls, and nori rice rolls. She demonstrates that no matter what size the kitchen, anyone who wants to cook with a conscience can make healthy food that nourishes the mind, body, and spirit.

Using organic (and easily accessible) ingredients, she brings an enthusiasm and down to earth approach to cooking that will appeal to any cook, no matter what their skill level.

This class is divided up into over two dozen videos that illustrate the processes involved in creating the three Asian dishes. Replay and review of the ins and outs of Leslie’s cooking tips are always just a play button away.

Breath is fundamental to every aspect of our life. We are born with an ability to breathe deeply and fully, but as we go through life, stress and tension can cause our breathing to become shallow and constricted and our voices strained and weak. Inefficient breathing can lead to fatigue, anxiety, muscular tension and even digestive problems. Getting back to the way nature designed us to breathe is a tonic that revitalizes body and mind. In this course we will explore ways to reestablish our natural, coordinated way of breathing. We will study the anatomy and physiology of respiration, observe the ways in which we interfere with our breathing, and learn tools and exercises to free and strengthen our breathing and voice.

Lakshmi Voelker

Lakshmi Voelker created Lakshmi Voelker Chair Yoga in 1982. Since then she has certified more than 650 teachers, including health-care professionals at the Mayo Clinic and the New York City Department of Education. She has dedicated her life to creating accessible paths to wellness by deveolping exercise programs geared toward those who cannot benefit from traditional methods of physical activity due to age or limiting physical condition. The New York Open Center is thrilled to offer her lessons in an online format.

Divided into 8 stand-alone video modules, Lakshmi opens each session with an explanation of what the postures are, why they are effective, and what results a practitioners should expect. These asanas (poses) engage the mind and body using methods that cultivate the inner peace through motion at the heart of the yogic tradition. Using crystal clear instruction and encouragement, these videos explain the benefits yoga has to offer all of us, no matter what our apparent physical limitations.

You can take 1 module, several modules, or the register for the entire series for a discounted price. The videos in each module function as standalone classes that are generally 20-30 minutes long. This workshop will intensify your engagement with the grieving process. It is for people who have had a loved one die any time in the past year and are still experiencing the inner turmoil of such a loss. Utilizing guided visualization, meditation, directed journaling, cognitive therapy techniques, and group process, you will explore the often overwhelming feelings and confusing responses people have when they grieve. The understanding of grief you will gain can help you discover the spiritual and psychological transformation that every loss makes possible. Time alone cannot heal a loss; it can only numb the pain and bury feelings deeper inside. Come do the work of facing your grief in a very direct and conscious way—the path to healing more deeply, no matter what part of the process you are in.

Taoist Inner Alchemy views the physical body as a kind of a laboratory in which our inner energies, the “Three Treasures” of jing (original reproductive energy), chi (natural energy), and shen (spiritual energy), can be gathered, cultivated and refined to generate greater vitality, health, happiness and, ultimately, for the assiduous practitioner, the “return to the Tao” (or immortality) through the birth of the “immortal child within.” In this class we will be introduced to some of the foundational practices of Taoist Inner Alchemy, including: “Opening the Microcosmic Orbit,” a sitting meditation that helps us enhance and balance energy flow in the body’s main energetic pathway; standing qigong grounding and rooting practices that strengthen the muscular/skeletal structure and provide a strong supportive connection to the earth; and the melting of blocked sexual energy for rejuvenation and to begin the “rebirth” process.

In early Greek religion, Eros was a god responsible for the creation of the world. In other words, eros is a creative principle in us. Eros includes sexuality, desire, pleasure, longing, connection, intimacy and love. We know that eros is difficult. Many have been brought up to fear it and repress it. For that reason alone it can be a portal to new vitality. Without eros, life dries up. So it is worth the effort to keep pleasure and desire alive. Indeed, they may lead us to the highest spiritual levels and to the sense that life is beautiful and worth living.
